Before I answer, can you please tell me if you are flying into and out of Shannon Airport or Dublin Airport? Or are you taking a ferry? If you are using Shannon, I would suggest an all-West of Ireland itinerary. It will probably appeal most to your four children - spending time in Galway, Kerry, West Cork, etc.
When you advise me of your gateways, can you also tell me if there is any interest in Dublin or other big cities? (Belfast, Derry, Cork, etc.). Are there any "must sees" on your list or are you totally open to ideas?
If you land at Shannon, you definitely will need a car. If you land at Dublin, you could base yourself in Dublin (get a self-catering place for a minimum of a week) and make day trips.
Personally, but without knowing you and your family, I would suggest heading for Shannon, renting a car, and concentrating on the West. But you tell me what you prefer!
