Self catering in one central area might be best for that many people. B&Bs will get expensive. Ballyteigue House, http://www.ballyteigue.com/, is a great location for day trips to the places you have indicated you want to see, catching the train in to Dublin can be done 8kms away in Charleville and both the Cork & Shannon airports are an easy hour and a half away. That would give you all a good base and room enough to spread out and relax.
As for a Manor House, there is Croom Castle Manor House, http://www.croomcastle.com/,which is self catering.
That will give you a start. I am sure that Pat will have excellent options for you, as well.
