The best choice is the Shannon Great Southern Hotel (now being renamed under new ownership as the CG Shannon Airport Hotel. It is right across the street from the departure terminal. You will be redirected to a new page - click on Shannon and you will get the hotel's new web site.
I have stayed there many times myself when meeting an early flight or takiing one. The best plan is to get back to the airport the night before (in time to return your car). Then, in the morning, just wak across from the hotel to the terminal with your luggage (free luggage carts are available at the entrance of the hotel), and check in for your flight.
