Much has been invested in the DIngle Skellig in the past few years, bringing it up to a 4-star level, certainly much more luxurious than an average Holiday Inn and defnitely miles ahead of Howard Johnson level of accommodations. Perhaps the info you were given is a few years old, when the hotel was more basic.
A lot depends on when you are staying and what type of room and the number of days. The hotel has 37 executive rooms which are really superb and do cost in the region you are quoting.
However, if you requested a standard room, the rate shown on their web site is 125 euro per person per night for B&B -- or 250 euro per couple. If you are staying two nights or more, however, you can save by opting for a plan that gives you dinner plus B&B -- for 250 euro per person for the two nights including a full dinner (which is worth at least 40 euro per person or more).
If you are staying in July or August, these are the high season prices. If you are staying in the next week or so in June, then the rate is 104 euro per person per night for B&B.
Check what your terms are (e.g. executive or regular room, B&B only or B&B + D) and then check the hotel web site www.dingleskellig.com, to make sure you have been quoted the correct rates.
Needless to say, it is a lovely 4-star hotel (the ONLY 4-star hotel in Dingle town) in a great location with fantastic views of Dingle Bay from the restaurant, bar and majority of rooms. It is very popular with Irish families in the summer, so it will be very busy in July and August, but then, all of Dingle is busy in the peak months. This hotel is set back from the main road, in its own grounds, with plenty of parking, so you will not have to be involved in the traffic congestion on Dingle's streets - you can walk to restaurants, pubs, shops, etc. See my picture of the hotel in my Kerry - Favorite Places to Stay - Dingle Hotels page.
